Chocolate, orange, pear nectar, stone fruits

Roasted for filter

Zeibigi, microlot coffee sourced from dedicated farmers in Uganda. These farmers live on the mountainside, about 600 meters above the washing station in the village of Zebigi.

This microlot is named after the village where many of the farmers reside. Recently, they received training on sustainable practices, including how to grow coffee among shade trees and improve harvesting techniques. In July 2022, over 8,300 seedlings of shade, fruit, and fast-growing trees were distributed to support their efforts, and ongoing initiatives include building toilet blocks for local primary schools.

The farmers’ coffee gardens vary in size, leading to different contributions. For example, Mr. Woniala Moses from Zebigi supplied an impressive 349 kg of ripe coffee cherries. Once harvested, these cherries are quickly transported to the washing station by a team of over 160 local “runners.”

At the station, the cherries are pulped and undergo a unique fermentation process that includes a pre-wash, a soak in cold mountain spring water, and a gentle 40-hour fermentation, followed by a final wash. Each batch is meticulously sorted through 12 stages to ensure the highest quality
